This is a link you should check out. http://www.capefalconkayak.com/usingyourgreenlandkayak.html Don't take my word for it that shoe size is irrelevant, but really, if you're correctly using a kayak that fits, you won't be sticking your feet straight up. Hence the reason shoe size is a moot point.

Morris's book is out of print, but I think that Mark Starr's book is a better instructional text. Cunningham relies VERY heavily on jigs, which will allow even a novice woodworker to built a decent kayak, but it would be pretty easy to get frustrated with how much time you were spending building jigs and not building a kayak. Mark Starr's doesn't go to this extreme, but still gives enough info for people who are new to woodworking. The differences are that Starr gives more latitude with design than Cunningham, and he carefully explains what your options are when you are given the option to make a decision so that you can make an informed one. He also has some clever jigs that are super simple and very effective, particularly his jig for making the coaming ring.
As for fit- it's all relative. My Wavesport whitewater play boat is MUCH harder to get into than my SOF, and my SOF is only 19 3/4" wide. Neither is particularly hard to get out of. Gravity kind of ensures that. Like it says in the Cape Falcon Kayak infosheet- don't wear shoes, don't wear mukluks. Go barefoot or wear neoprene socks. You can hang up on a rib.
