Regardless of what size the orriginal plywood panels are, you still make the hull pieces the correct length as stated on the plans. The only difference will be the location of the scarfs and that shouldn't matter in the least.

Plywood panel length will depend on who makes it, the normal size is 4x8 and I've got several sheets of marine grade ply that's that size at home. Obviously some mills make it longer, but I've not run into that.
