What a bunch of wet blankets!
First, I do agree that the Night Heron is a viable choice for the two men, and that a Guillemot might not be a good choice for the Missus.

But, lots of people build strip kayaks in less than 400 hours, or even 300 or 200 for that matter. Remember that the plan is to build two Night Herons, so that the forms and strongback will already be in place for the second boat. By they time they get to the third kayak thay will have a lot of experience. These folks have a chance to get fairly high up on the learning curve in a short time.
