After building and trying to build lots of plywood boats, there are shapes that plywood won't easily make. Yes, very thin ply can be tortured to a small extent, but generally that material can only be bent into a cone, a cylinder or flat sections at one time in one place. Most sections are cone shaped on a boat, but those on a SOF are often shapes that would have a serious twist to them in addition to the cone and plywood won't happily do that. Though as Paul stated, adding an extra chine or two will allow most shapes to be covered. Still now days many shapes can be had with S&G avoiding the weight of the chines, helps when you have to pick up the finished boat :)
