I've only used cutting boards in a kayak as reinforcement for the front bulkhead, one on either side. We wanted to mount a battery and a pump on a plastic bulkhead, but the bulkhead was too weak. So my mate's wife's cutting boards were sacrificed (she was away). They shape easily, are strong, hold screws and bolts, have given no trouble over several long trips. Only the wife gave trouble when she returned. We kept them off the bottom to prevent tear out if the kayak bottom flexed or hit a rock etc.
