Well....I've done it two ways. On my first one I did like you and had the stringers too long and I bent them to shape, decided I liked that shape and cut the stems to fit. Of course this way it's an experimental boat as it's no longer as Tom designed it. Other way, probably a better idea, is to follow the plans :)
