Hatch gaskets

Try yoga mat material. You can get them at Walmart or other discount stores. I have seen them as cheap as $6. It's a closed cell material. My one boat with the crank down wood hatches seals perfectly with gaskets made from that. There's a little more "give" since they have a bit of thickness but not too thick either.
