Stupid question (the closest I've gotten to a strip built kayak is sitting on this side of the computer screen), but what if he used two different types of wood? One with a dark grain, the other with a light grain. Join the two (scarf? I don't think a butt joint would be strong enough without reinforcing it with an overlapping strip inside).

Joining all those strips would be a bit of extra work, but it looks good. If you don't have access to clear wood that's long enough, and have to join strips anyway... may as well make it look good.
