Hi Dan,
It sounds like the ratio of resin and hardener may have been off slightly. This will usually produce a rubbery consistency. It could also be the actual mixing was not thorough enough. Locktite brand is sensitive to temperature but not as much as marine epoxy like Mas or RAKA or West. Even that, 40 degree will slow but not stop the set.
You could go ahead and lash the joints in question. This will reinforce the joint sufficiently.
