That sounds like it will work, but you're going to be limited to using a very short stroke, which will increase the amount of time required to hone a blade. For touch-ups, it would be OK, but if you have to remove any significant material, I think you'll find it to be a serious limitation. There are jigs designed for use in the manner you describe that will work much better. Check out this link:
