For my SOF I hand-shaped made them out of ash and attached them with a brass screw underneath. Having used pegs and lashing for the rest of the kayak would have been better to use a dowel through the end of the stem.
For the strip built kayak I've cast a lump of thickened coloured epoxy to each end and shaped it with an angle grinder.
