Yes, the videos are interesting, but the splashing of the Epic boat as it moved past the wave crest was ignored.

If you think of a straight beam and a curved beam of the same length pushed over an obstacle the curved beam rider will

have a much more shaky ride. This is oversimplification but, I hope, makes the point clearer.

Certainly there was more rock and roll to the ride of the rockered kayak, but so what! Some might enjoy a rougher ride.

As John pointed out the Epic is not going to surf, turn or handle well down wind.

Interestingly, the baidarka design does both handle big waves head on and surfs and turns easily down wind.
