Hi Mark,
PolyTak will work, it's just expensive, so normally I don't use it and much more time consuming.
A quart kit of epoxy will be plenty I'd think. I normally have several gallons around so I don't keep track, suppose I should. Depends on the cloth you use, some take quite a bit more resin.
The finer the weave of the glass the less resin you'll use. I just buy what I can find at a reasonable price, I'm not "that" picky. I just wet out the cloth, adding more to fill the weave just adds weight and extra thickness makes it more rigid and prone to cracking.
The final finish depends on what you want for color and finish. I've been using boat paint, Rustoleum's brand works fine and is cheaper and easier to get. I've been planning on doing one in colored varnish just to see how it would look, but havn't yet.
