I was obsessing over finding the "perfect" gunwale stock and finally someone either here or on the Greenland Forum told me: "Just buy some wood and build a boat." While it sounded a bit harsh (I suspect whoever it was had gotten tired of reading my obsessive posts), it's the best boat building advice I've ever had and I will always be grateful for it. So, if you're reading this, thanks!
