If you want to sail anything other than directly downwind you'll need more than a sail. A kayak's lack of stability and since you can't shift your weight easily to windward means that outriggers (amas) will be required if you don't want to swim all the time.

CLC has plans for an entire sailing kit, outriggers and cross arms, a leeboard (have to resist leeway caused by the sail somehow) and rudder.
