I kind of understand you point, I prefer hand tools, but having learned the majority of my skills in a commercial cabinet shop I know this is one of the things that I could do much faster and more precisely with a router, and get repeatable results. It has to do with comfort level and experience. If you don't feel comfortable with the process why do it?

I don't know if I'd try a jig saw. It's way too easy for the blade to deflect and cut out-of-square, even on a fancy jig saw like I have and super-premium blades. As long as you didn't mind a really big filled colored glue line it would probably work.
