I recently completed my first boat, which was a strip model. It is a lot less complicated that it looks. If you take your time and have decent tools it is really fun. In fact I found that fiberglassing was by far the most difficult part of the process, and you have to do that no matter what you build, well not counting skin on frame. Absolutely nothing against Stitch and glue here, but if the only factor in your choice is ease of build, then don't rule out a strip built boat.
