One big difference is that mahogany is an absolute joy to machine. OTOH, when rounding the edges of Douglas fir parts on a router table (with appropriate featherboards), I've had fragments literally explode off it. Perhaps there are variations in Douglas fir, but the stuff I've used has just been plain nasty to work with. As you may have guessed, I really don't like the stuff.
