Spruce, sitka if you can find it is nearly ideal. Very high strength to weight ratio. The wood will have to be dried before you can use it, sticking it (putting spacers between the planks) and turning it occasionally while under cover from the weather will work very well. Air dried wood is vastly better for boatbuilding if you can find it vs. kiln dried. It though does take some time to dry.

Look up air drying lumber on the web.
