As I said before, I know from first hand experience that it can be done if you are sufficiently committed.

Unless your system is different from the NSW system, the purpose of the project is not just to produce something, but to demonstrate research, planning, problem solving, organisational skills, technical skills and a few other things as well. In fact in our system, a spectacular product is not worth much without a supporting portfolio explaining how things were done, why particular materials were used, how problems were overcome and so on. I imagine the same is true to at least some degree in your system.

The project is not just about creating a kayak. It is about so much more than that. So while the advice others offered might have been quite appropriate in different circumstances, I don't really think it was what you wanted.

The decision you have made gives you more opportunity to demonstrate all those other things and a greater range of skills.

As long as your long term commitment matches your initial eagerness, you now have the opportunity to impress your teacher or examiners.
