: I am still on the fence a bit about whether to go with hand

I finished my first kayak this spring and did not go with B&C. Yeah there was some minor gaps but nothing too noticeable. I'm glad I did it the way I did. although like someone else said, gluing is a bit messier, so when it comes time to strip your deck, lay down some plastic on the inside of your hull to catch the glue drips that will be running inside your hull...they're a pain in the butt to remove later imo. Sharp blade on your plane is key.
