I've paddled a whole bunch of wood/canvas canoes and trying to think how thick the inwales/outwales were. I'm thinking they were thinner than 3/8" but I'm not sure. I'd go find one and look, this is somewhat similiar construction to one of these canoes, works for them should work for you.

Some wood canoes had internal keels that seemed to work fine, gave more manuverability than an external keel, or so I've read.

You could use wider thinner stringers over more ribs to give a more rounded shape again much like a wood/canvas canoe. I've done it on a Yost kayak with a stripped chine and it worked fine, though it adds considerable weight.

Drop skeg will work, but with lots of bent ribs they'll have to be sectioned around the skeg which complicates the construction. Look at round bottom wood centerboard sailboats with steam bent ribs for an example.
