I am building a guillemot strip and my deck design is somewhat reminisent of your drawing (see guillemot deck half stripped thread below). I used bead and cove between the two pine strips with flat edges on the outsides, then the accent stripps are 1/4 inch rolling bevel, and all the rest of the cedar is bead and cove, hull and deck.
I personally find the rolling bevel a pain. I have never once said " I wish I didn't rout all these strips". I have heard other say that b&c is a waste of time but it only took me a day and the locking in over the length of a strip makes me relax a bit when trying to twist strips around curvy area's, it is kinda like a full length clamp.
When I build another I won't even think about not routing my strips, I even think I would double cove the shear strip so the deck "clicks" in instead of rolling that strip as well.
