You've put a lot of thought into how you want this to look, which is cool. I just wanted to comment on your wood choice. Make sure that you're choosing wood based on how it's going to look after it darkens, not based on how it will look when you put it together fresh.
If you want your accent stripes to be really light, pine is a good choice when you're stripping, but as pine darkens it turns yellow to even orange. Basswood and maple are a couple of woods that will stay much lighter than pine and are just about as easy to come by. Aspen may even be o.k. The classic white wood is holly, but that would be a lot of trouble to source unless you were unusually dedicated.
