OK Damian, you asked for an opinion, I am here with my pail of water - no pun intended :)) I built aerobatic biplanes for many years and helped start the largest homebuilt biplane forum on the web in the world - biplaneforum.com - inching towards 1800 members. I saw a lot of totally amateur first time airplane builders fall in love with a particular design and decide they were going to build it. The "never completed" rate was very high because the learning curve was so high. They lost interest and gave up.
There is nothing wrong with taking on a big project and stretching your learning curve, in fact I encourage it. This is why I built planes, this is why I build kayaks. An analogy, it is like school, many grade levels, learning more at each level. I doubt anyone can jump from 1st grade to 12th grade.
There are a lot of beautiful kayaks on this forum. I will bet a lot of money they are not the builders first project and if they are the builder has a lot of wood working experience in other areas and/or a lot of personal perseverance.
I am not suggesting for a second that you can't or shouldn't. I am saying be sure you have the patience to learn as you go so this boat will have the quality you want it to have. One thing in your favor, if you decide to go directly to 12th grade and build this beautiful boat you have access to a 'boatload' of experience and common sense on this site. Make use of it and I wish you the best of luck:))
