Strip: Advice on storing unfinished strip

I plan to store (in unheated garage) my partially finished Night Heron High Deck strip kit until spring. I'll get as far as completing hull and deck stripping - leaving sanding, glassing, and finish work undone. I will leave everything stapled to the forms during storage. Since this is my first boat building adventure, I'd like to know if if I'm stepping off a cliff, missing something, or any precautions I should take.
I live in Central NY - winters are cold.
