: completing hull and deck stripping - leaving sanding, glassing,
: and finish work undone. I will leave everything stapled to the
: forms during storage. Since this is my first boat building
: adventure, I'd like to know if if I'm stepping off a cliff,
: missing something, or any precautions I should take.

Be careful of moisture in this situation. If your garage is damp because of temperature cycling or leaks you could end up with rusty staples and stains on the work.

If bare steel has not rusted in the past you'll be fine.

The only other issue I can think of is that you'll be missing out on working on your project for the whole winter and you might lose motivation by spring. You might consider enough heat to keep going through the winter -
