Instead of the 2090 I'd go with the 2070/3100 for a higher surface hardness and flexural modulus (ie stiffer). It's still pretty thin.
I'm currently using the Project 21 2000/2100 medium resin. I'd like to try the Composite Pro system you listed. I don't know if it's available in the CE package with the added UV stabilizers. If it doesn't I'd use the thicker P21 system for gel and fill coats and laminate with the CP system.

That the glass wets out perfectly clear! ;) Also check bubble formation and see how long it takes to "kick." Mostly get used to it.
