Thanks everyone for the great responses.
I will completely encapsulate the magnets in epoxy, so water intrusion won't be an issue, and I will be packing things pretty tight. Especially since I'll be expedition/touring in a Hunter. I think the magnet system with a keeper strap will be the simplest, most streamlined method of keeping the hatches in place for my purposes.
Didn't mean to start an argument between Rob and Bill...
