Hey Darel,
I'm very curious about these joint breaks. I've used both in my boats and other applications and have never had an issue. If the glue has been properly applied and allowed to cure, the joint should be stronger than the surrounding material. I have used Titebond II for years for this type of work and find it works quite well.
Can you post a photo of the failures?
My suspicions are:
(a) that you are using a cheep glue - unlikely, but possible
(b) that the wood itself has been compromised - unlikely but I've seen it happen
(c) inadequate pressure on the joint during cure period - most likely culprit. We all have our nutty approaches to this. Mine is to brad nail the joints to keep them aligned, then I place as many sand bags as I can find on top to evenly distribute the weight across the joint.
(d) the wood has already been sealed with epoxy - epoxy and wood glue don't seem to mix all that well for me. Glue first, epoxy later.
Just my thoughts. The "Z" joint you describe sounds like a finger joint and these look nicer, but I believe that they are actually weaker than the scarf or the butt joints.
