Are these forms in the area of the cockpit coaming? If so, there may not be any "top point" for your forms as there will be no strips in the cockpit area once you cut an opening for the coaming. As you build, if you are using full-length strips you would just lay them from bow to stern, and they would bridge the cockpit area without being bent over forms. If you were using shorter strips you would just end them a few inches into the cockpit area and have less to trim away when you cut out the cockpit entrance.

Generally speaking: Some designers leave those forms open, some designers show them as flat lines, and I suppose it is possible that some might include a "phantom" height that might help form a curve in the strips for the bow or stern decks. After the deck is completely stripped it would hold that curvature, but the ends of those strips are cut off at the cockpit coaming, and the finished boat is nowhere near as tall as that "phantom" height might imply. I can't think of any kayak designs which do this, though. It is also possible that these have a nominal height which is expressed in the instructions, or in a footnote, but not shown in the usual place on a table of offsets
