Hi Greg,

I use three spokeshaves when I am carving paddles. A Stanley "51" set fairly coarse to take my machined blank most of the way to the carving lines. This removes a lot of stock fast. Then I switch to a Stanley "151" , set much finer to take it to the lines, and finish with a Low Angle Varitas that pulls a curl about the thickness of tissue paper.

One thing to keep in mind; "The wood will let you know which way it wants to be carved".
