Strip: 3.2 oz Questions

I am about ready to glass the hull on my Night Heron with 3.2 oz glass from Thayercraft and I had a couple of questions about the layup. I am going for a reasonably lightweight layup, but with enough strength to not worry about it. First off, should I do two layers of glass inside and out of the hull and deck, or are there areas that I can get by with just one layer? Second, should I wet out both layers at once, or just one at a time with no fill coats in between? Thanks!
