Graving piece? Nah (Whatever that is--gotta get out the dictionary). It is just a rough gauge. It was cut at the same angle as the scarf, so tracing along it gives you a copy of that angle. Might as well have all the scarfs at the same angle. A long angle scarf does remove more wood so don't do this for small knots--just for the really big ones.

Remove small knots on a strip by strip basis, cutting the strip near the knot, cutting it again to emove the knot, and making a butt joint to put the strip back together again.
