Thank you all for the suggestions and (this being my first build) even more so for your words of encouragement.

I could have replaced the keel strip but this was my second attempt at it. The first was an ash strip and the contrast in color made the squiggle in the keel even more obvious. This time I had a buddy help when I laid the full length strip to get it as straight as possible. Any wiggle is probably due to a less than perpendicular shaving of the keel to prepare it to accept the strip.

As many of you noticed the keel strip itself wasn't trued up as well as it should be so I took care of that first. Then I tried to twist the bow and stern back in line by clamping a wooden handscrew around the bow and stern, aligning the ends of the boat by attaching inner tube and cord around the handscrew to deck screws placed in the strongback. This was to compensate for the twisting pressure of the strips connected to the bow and stern. Then I wet some towels with as hot as I could get tap water, wrapped that in plastic wrap and a camping pad (to hold in the heat). I let it cook for about an hour then removed the towels and dried the wood with a heat gun. Not perfect but I think it's improvement enough that I'm ready to move on with the build.
