My primary bench has a layer of 3/4" ply and the top is a layer of 3/4" MDF. I glued the two to together and then put in a series of bench dog holes. It has lasted for five years or so now. It is dead flat and very solid. The one weakness is that the MDF is particularly sensitive to denatured alcohol. In retrospect, I should have sealed the top. I just built a wall bench, similar to what you show here and just put a 1/2" MDF top on it and it appears that it will work out pretty well.
