Best workbench top material (after rock maple, or birch) is MDF, medium density fiberboard.
It looks a bit like particle board, but it's very different, tough, dense, flat as glass. Heavy.

A coat of sealer and it even stands up to even occasional rain. I had a piece for a low assembly table, left outside, cut it into a dinner table top (under a table cloth), then cut that into three or more other projects.

One friend used to mill it into crown molding.
