There are classes offered at the North House Folk School in Minnesota. You can make your own knife, including Finnish, Danish and Swedish styles. Blacksmithing techniques for working the steel, and woodworking techniqes for making the handles. Also they have a course on making crooked knives--which is where this thread started.

And of course they have courses on boatbuilding, including canoe and kayak making. Not all the courses offered every year. Check for the schedule, or contact them for info.

Read the descriptions of their boatbuilding classes carefully. some classes build just one boat as a group effort. Other classes each participant builds a boat. Classes are not cheap, but it looks like a delightful way to spend a vacation week, or 3.
