Besides having to seal the seam perfectly, you will have a very strong tracking kayak I believe. The rub strip will act like a long, low skeg. I have heard, though not experienced, that even adding a rub strip in the form of keel tape to something very turny like a Romany or Anas Acuta can significantly change the tracking.

If I were going to try a keel seam, I probably would not add a wooden or plastic rub strip, but instead try to mask it off well, and spread an even coat of 3M 5200 and just bury it. Make it as low as possible.

But seamless skinning is intriguing, and Robert Morris tried a method using splines, like how your window screen may be kept in the frames. See the issue of the Masik at the link: http://www.qajaqusa.org/newsletter/Masik_Summer_2009_082809.pdf
