I've never done it, with no worries so far. Both MDO and marine plywoods have waterproof glue, and are designed - at the least - to be exposed to the elements. What would the epoxy be doing? It might retard water absorption through the end grain, yes, but it would work equally well at retaining moisture, too, instead of letting the wood dry out.

That's just my take on it. Other's swear by epoxy coating things.
