Any commercially available oak species sould bend well - air-dried bends a bit easier, but with the right techniques kiln-dried will bend more or less the same.
I have had good luck with both air and kiln dried red and white oak, but I have never tried ash. I dont know if I would try birch unless you happen to have it on hand already...
I have tried bending other hardwoods - such as maple, mahogany, and teak, with little success - but oak is about the best of any hardwood. Other woods that bend very well are black locust and northern white cedar, if they are available in your area.
I have also laminated western red cedar ribs (waaaaay too much work) and oak coamings (not as bad, but still prefer steam bending).
