You re probably over-thinking it a bit.

Take the deck off and place it carefully to one side.... (It will remain very amenable to reshaping as long as it is still un-glassed)

Glass the hull outside.... and remove from forms.

Glass the hull inside, and place to one side, with width spacers if you like.

Put the deck back on the forms and glass outside.... then remove from forms

Glass inside.

You have to pluck up the courage to remove the thing from the strong-back sooner or later.

Don't worry too much. It will go easier than you expect.
