Hi Chris,
It should be fine. I've just done a wee bit of epoxying with 7-8 year old WEST and it's turned out as well as the parts I did when it was new.
If it's stored in good conditions, I don't think epoxy actually goes bad. But do a small test piece for colour, mine is a small bit darker but that could be the difference in the timber colour.
