Hi John,
I use West system too, and while it's nice if you can get to it the same day, I've done it up to a week afterwards with no ill effects at all. It is very much temperature dependant, like everything with epoxy, if the shop temps are very warm then layers have to be added sooner. If the shop temps are cooler you can extend the time for the next coat without sanding considerably. I normally try to not work on boats in the summer (paddling season), so my shop tends to be on the cool side.
