Fill coat(s) should be done ASAP. At least within 72 hrs of the glassing depending on the brand of epoxy. Read the epoxy manual. You want a chemical bond between the epoxy coats. If you wait too long, then you would have to do a mechanical bond, which means sanding, and you would sand through the fiberglass. Don't wait.
