That's it in a nutshell. As far as strength is concerned virtually all wood glues are OK; let's face it, once the glue strength exceeds the wood strength the question of which glue is stronger is pretty academic.

The question is, what happens when the water gets to the joint. If you use epoxy the answer according to most authorities is - nothing. The bond is molecular because the epoxy resin and the wood resin are chemically related.

With water-based “waterproof” glues like Titebond III - where the grip is provided mainly by a mechanical key within the grain - the answer in my experience is - once the wood gets saturated either the wood or the glue softens and it’s grip weakens, but if the joint doesn’t fail the glue regains most or all of its grip once the wood dries out. If you pull the boat out after every trip using epoxy is really just insurance. But IMHO any glue used on a boat should at least be claimed by the manufacturer to be waterproof.

A potential problem using Titebond III (I haven't tried their other products) is, if it does let go - usually due to dry joint or clamping problems - it won't stick to its dry form and nothing seems to stick to it either, so the glue has to be entirely removed from the joint before a repair can be made, whereas epoxy sticks happily to epoxy.
