Finish the recess and coaming and then plane, sand, fibreglass.
Fibreglass and epoxy blunts tools.
The recess and coaming will all hang together quite well without being glassed.
You can glass the coaming in sections as well.
Don't try to do it all in one go, but go from deck to underside (outside) of coaming, from underside (cockpit side) of deck to top of coaming. Forget about the outside edge.
