I just use a carpenters handsaw. The blade is flexible enough to take a curve but stops wiggles that a jigsaw could induce. The planks are laid on the building table which when inverted has the "V" pieces to hold the bottom planks to the correct "V" shape - same angles as the bulkheads and fitted in the same places.

As for matching panels, I often bolt them together with 3 or 4, 4 mm (3/16") bolts. The wiring holes need to be filled so a few more holes won't be noticed. however that wasn't good enough for my partner, she insisted on clamping her's together so that there wouldn't be holes. Once bolted or clamped they go in a B&D Workmate and the curves on the keel and chine are faired. Basically, make sure the same "mistake" is on both sides. The side panels are treated the same way.

As I'm the one doing the designing, I use my wood patterns but with a new design or modifications, carbon paper under paper patterns.

Dictaphone - depends how far back you want to go. The old valve (tube - US) ones definitely didn't fit in your pocket and digital was decades away. (Now who is gray haired?)
