Dave,
On my guilly build, I didn't get the stern part of the hull pinched in as well as I should have. It was very loose and weather cocked real bad. After a few weeks of trying to get used to that, I added a small skeg (fixed). My skeg is prolly a bit larger than I need, but it works and doesn't interfere with turning as long as I lean it a bit for the turn. The boat is now weather neutral too. Here's a picture if it helps..
