You can hang it from the toggle holes or from the hatches and do it all in one coat. Personally I think hatches might be better because rods in the toggles could restrict your arm movement.
I did the hull first, then the deck, all in one session...4 coats total. I suppose it doesn't really matter as long as you break at the sheer. You'll need a good work light that's easily movable and knee pads were nice when doing the hull.
Be sure you're feeling relaxed and have no possibility of interruptions.
